Japanese Udon Miso Noodle Soup

Ingredients

  • 1 package sanuki udon
  • 4 cups chicken stock
  • 1½ tablespoon white miso
  • 2 teaspoon dashi
  • 1½ tablespoon soy sauce
  • 1 teaspoon salt
  • 1 stalk spinach, cooked
  • A few fried fish balls
  • Fried egg
  • Shrimp tempura
  • Furikake

Directions

1. To make udon soup, combine chicken stock, miso and dashi soup in a small saucepan. Bring it to a boil over medium high heat.

2. Once boiling, add soy sauce, and salt. When boiling again, turn off the heat and set aside.

3. Cook the udon noodles according to the package directions, drain and set aside.

4. To serve, transfer udon noodles to bowl. Add soup, spinach, fried fish balls and fried egg. Add shrimp tempura on top and serve. Sprinkle furikake for more flavor.
